Tasting Note
Colour / Appearance:Rose petal pink. Aroma / Bouquet:Delicate crushed strawberry and sweet cherry fruit flavours with refreshing watermelon and cream soda notes. Palate:The palate is soft and plush, supporting delicate berry fruit aromatics and creamy complexities, with a long, clean acid finish. Cellaring:Our Rosé is youthful and fresh to be enjoyed now and can be cellared for 2 to 3 years. Food Match:This is a Rosé suited to pairing with food. Try serving with smoked fish, pates, fresh green salads or mild hard cheeses such as edam, gouda or gruyere.
Serve:Lightly chilled.

Viticulture
Harvest Date:2nd April 2012 Climate:The early part of the season was cool and wet, resulting in lower yields and a late harvest period. Long dry spells over the final part of the ripening season lead to an accumulation of intense varietal flavours, high natural acidity to retain these flavours and clean fruit. Vine Management:The vines were pruned to two canes on a vertical shoot positioning trellis.
Vinification
Winemaking:The fruit was hand-picked then crushed and de-stemmed. Twenty four hours of skin contact in the press ensured a suitable amount of colour and flavour extraction. The juice was lightly pressed and cold settled. A cold fermentation with selected yeast ensured a wine with lifted aromatics and freshness. Winemaker:Sam Smail and Diana Katardzhieva.
