Following trials, the base wines were blended and a 5% addition of reserve wine from 2018 was included. The wine was then bottled with a small addition of sugar and yeast (tirage) and underwent a second fermentation in bottle which produced additional alcohol and trapped carbon dioxide in the bottle (giving the bubbly effect upon opening in the finished wine). The wine was then aged on lees in bottle for 37 months, developing complexing, savoury and toasty notes. They use the same grape varieties, in this case solely Pinot Noir, which gives this dry sparkling rosé its pink hue and its aromas of raspberries, red currants and dried strawberries, which are held together here in a vibrantly youthful style of bubbly - newly disgorged, containing 3.7 grams per litre of residual grape sweetness and a long finish. Its best drinking window is now and over the next three years, which will see it soften and evolve into a more toasty style of bubbly.
