TASTING NOTE

Colour / Appearance: Deep ruby, with a brick-red hue.

 Aroma / BouquetA complex array of cedar, bottled plum and cherry, with notes of oak spice and beetroot.

Palate: A full bodied wine, with soft, ripe tannins and a velvety texture. The opulent fruit and savoury flavours persist on the long, supple finish.

Cellaring: 
This wine will cellar for five to eight years.

Food Match: 
Particularly suited to confit duck and other game dishes, such as rack of wild venison. Also pair it with slow-roasted pork or mushroom risotto.

Serve: 
Room temperature.

    VITICULTURE

    Harvest Date: 
    2nd & 4th April 2013

    Locality:
     All grapes were grown by Michelle and Andy Peter in the Awatere Valley.

    Vine Management: 
    Vines were pruned to two canes on standard trellis, with vertical shoot positioning. During the season, the vines were shoot thinned, trimmed, leaf plucked and fruit thinned to ensure favourable ripening, clean fruit and maximise flavour.

    VINIFICATION

    Winemaking: 
    The fruit was handpicked and destemmed into an open top fermenter, then cold soaked for five to six days before fermentation. During the ferment, regular hand plunging ensured optimum and gentle extraction of colour and flavour. The fermentation temperatures generally peaked at 32°C. The wine was pressed immediately after ferment, with the heavy pressings being separated to aid the silky texture. After racking, the wine was transferred to tight-grained French oak barriques for 15 months ageing. 38% of this oak was new. Malolactic fermentation was allowed to occur naturally in Spring. No fining or filtration was used on this wine, adding to its complexity and longevity. The bottling date was 24th September, 2014.
